A healthy take on enchiladas

Eating healthy in college doesn’t have to be difficult. Our new segment, “Clean College Eats” aims to bring you easy, healthy and delicious recipes.
I personally like this recipe, because you can scrape the enchiladas out and put them in a container to save them. I use them as part of my meal prep.

Here are some tips for making the process even easier:
- The recipe calls to make your own enchilada sauce. Using store-bought sauce is just as delicious and much easier (takes less time, too!).
- This is a vegetarian dish, but if you want added protein, you can easily add some chicken or ground beef.
- If you have trouble cutting the spaghetti squash open, microwave it for 1-2 minutes and try again. It should be easier to cut.
